Great Food, For a Great Cause


We set out with a couple very important factors in mind. Create an event that showcased the great culinary talent that Palm Beach County has to offer and raise awareness to local community causes. Everyone loves great food and there isn't anything better than enjoying great flavors while being among friends and family. All to support great causes.

Each year we have continued to grow and expand our guests' favorite experiences and this year will be no different. The 2016 Feast of the Sea will be held October 22, 2016 starting at 11am inside the Meyer Amphitheater. What is slated to be one of the most memorable 1 day seafood and culinary extravaganzas to date, this year will involve 24 of the best Palm Beach County chefs representing their amazing respective restaurants and brands.

During the FREE daytime feastivities guests enjoy great food and beverages, demonstrations, live music, and much more. One new addition is the Knife fights; hourly chef competitions where all the chefs will stop everything a compete in some friendly chef battles for cash. One knife battle is the ‘Slice and Dice’ where each chef will be given ingredients to slice and dice as fast as they can inches from guests faces for their chance at winning some beer money.

The night time transitions into a private grand tasting; 4 hours of heated chefs competition. For the 3rd year; 16 of Palm Beach Counties best culinary marksmen will create sparks in front of an amphitheater full of people and projected on 2 large LED walls. 4 rounds will determine the last chef standing and be crowned 2016 Maestro del Mar. As well as, the proud new owner of an over-sized plastic check worth 5000 dollars. This portion of the day is a private event and exclusive passes go on sale August 1st and will sell out.

A portion of each pass sold goes to several of our local organizations including our main beneficiaries, Ernie Els - Els for Autism Foundation that will be starting a culinary program on campus and be open to all individuals on the spectrum. As well as, Future 6 Helping Hand Fund; this local organization provides free action sports camps - Surfing, Skating, Fishing - for kids with special needs and at-risk youth. The synergy between the 2 organizations is really something we are excited about this year. We have a great beach party planned that includes all the kids from both sides. This will take place prior to this year's Feast of the Sea.

A free general admission event during the day seasoned ith exciting feastivities for guests. Then, transformed into a private chefs challenge event at night. Free Seafood Festival 11am-4pm Private Chefs Challenge Grand Tasting 6pm-10pm.

16 chefs from our chefs challenge will be serving up their amazing dishes along with 4 other Palm Beach County seafood restaurants serving up delicious recipes. 4 non-seafood alternatives will be available serving up mouthwatering plates that appeal to everyone.

Each year 8000+ hungry food connoisseurs descend to the beautiful West Palm Beach waterfront. This year the Meyer Amphitheater plays host of the most and will be known after as the 'Chef's Colosseum'. We look forward to seeing you there.

Feastivities


This year we are introducing several new experiences for our seafood lovers. In the morning for the free general admission part you will not only be able to try amazing seafood dishes from your favorite chefs, but guest speakers will be delivering several seminars on food recipes and traditions. As we transition into the private evening activities guests will witness a never before seen spectacle of hot iron skillets and sharp knives colliding on jumbo screens as they sample recipes created by our chefs. This is going to be incredible and we can't wait to fill you in more.

To get the blood flowing and kickoff the day, each of the 24 chefs looking for a little fame and a little fortune will have 5 minutes to slice and dice the basket ingredients with executing with the best skill and consistency. The chef that does this the best will be rewarded with one hundred bucks and the bragging rights.

While the infamous tune plays in the background each chef will need to breakdown a chicken using speed and skill the chef that does this in the quickest time and with the best results will be labeled the chicken king and be rewarded with some green backs for their efforts.

Ben Prestage’s musical background began before he was born... even before his parents were born. Ben’s great-grandmother was a Vaudeville musican who toured with Al Jolson and also participated in medicine shows. Her daughter was a Boogie-Woogie pianist and painter who used to play for Ben when he was coming up. On the other side of the family tree, his grandfather, who was a Mississippi sharecropper turned Ben onto the sounds and culture of Mississippi and Blues in general. www.benprestagemusic.com

Flash Challenge - Round 1
The Clean
Venue: Meyer Amphitheater

All 16 participating chefs will have 25 minutes to clean multiple fish provided in the secret ingredient baskets. Each chef will be judged on time and quality of clean. The top 4 chefs will move on to the semi-final round. The bottom 12 chefs will move on to Flash Challenge round 2.

Our host will announce the top 4 winning chefs that will be moving on to the semi-final round later in the evening. The remaining 12 chefs will battle one more time to see the last 4 chefs to move on.

Flash Challenge - Round 2 Last Chance Qualifier
The Shell Shuck
Venue: Meyer Amphitheater

The Shell Shuck is the last chance for the remaining 12 competing chefs to move on to the semi-final round, the Appetizer round. In this flash challenge each chef will be given several different species of shellfish and will have 25 minutes to shuck the basket of shellfish provided to them. The judges will them determine which 4 chefs earned their passes to the next round. It takes skill and experience to shuck shellfish and we believe our semi-finalist chefs should know as well.

The Top 8 Semi-Finalist chefs from the flash challenge rounds will compete to win over the judges in this 45 minute appetizer round. The secret proteins and pantry items will be unveiled and the chefs will fly into action. The 4 best chefs will continue their journey on to becoming the 2016 Maestro del Mar Champion and 5,000 dollars richer.

The 4 Finalist will go toe to toe in what is set to be the most anticipated match up of the year. With 45 minutes to create amazing seafood entrees from our secret ingredients these chefs will once again have to endure the pressure of the clock and their peers. In order to win the title each chef must create dishes that are stunning in multiple categories all while staying within the cooking criteria. The winning Chef will not only win the cash but will also be able to claim the glory of being Palm Beach Counties 2016 Maestro del Mar Champion.

Chef Cassel can’t remember a time he wasn’t in the kitchen. He credits his love for cooking to his parents, who started him on the path early in life as a young boy in Tulsa, Okla.

“I grew up cooking,” he said. “My mom and dad were great cooks and the majority of my inspiration. We used to pick food out of the garden and make it into lunch or dinner right away. Mom would say go pick this or that and within an hour, we’d be eating it. I still put dishes on Hullabaloo’s menu that my mom made when I was growing up.”

Blake’s cheffage story is one of humble beginnings starting with strong parental encouragement to follow his dreams. While in high school Malatesta worked in a variety of family run restaurants learning as much as he could, working through the ranks. Having found his passion, after graduating high school Malatesta secured a position within the corporate structure at Darden Restaurants as a regional culinary trainer.

During this year he worked in back kitchens throughout Europe and Eastern Europe gaining much hands-on experience. After returning home Malatesta worked as a sous chef at Saddlebrook Resort in Tampa.

Blake began his culinary journey at 50 Ocean in April 2012 and has set his sights on making 50 Ocean one of the hottest restaurants of Florida.

Executive Chef Clay Carnes, one of the hottest chef’s in Palm Beach County, announces his new concept that he says will catch fire within the scene. Cholo Soy Cocina, currently the doors are set to open in Summer 2016, will be showcasing a new kind of Latin street food to the community.

“Cholo Soy is our brand’s name. "Cholo" being a slang term in Ecuador for the indigenous people. It also means something “mixed or ghetto.” I came across it written on a wall in a Peruvian restaurant. It reflects our cuisine here as "mixed" and indigenous or authentic,” says Carnes.

I have worked as a busser, bar-back, worked in the pantry, expo, and many other parts of the kitchen. That helps make me successfull. Becoming an executive chef did not happen over night, it took a lot of hard work, long hours, and dedication to make this happen. I am still learning every day.

Manning the Kitchen at C.W.S Bar + Kitchen is Jessie Steele, who made his name in the Delray Beach area over the past 8 years. Guests will savor a wide range of worldly selections featuring sharing plates and nightly entree specials. His menu will be the perfect pairing to our cocktails, wines and beers. Jessie grew up in Delray Beach Florida, inspired by Italian and Brazilian cooking from his Grandmothers. After graduating from the Florida Culinary Institute, he worked for Chef Nick Morfogen at 32 East and Chef Ellis Cooley at 3rd & 3rd. His influencers Julia Child, Graham Kerr, and Emeril Legasse inspired him to create scratch dishes that are the backbone of the C.W.S. menu. Jessie is known for his interesting twist on vegetables. When he's not cooking, you'll find him playing his Fender Jazz bass with his ska reggae band around town.

Chef Miguel Santiago, executive chef at Hilton West Palm Beach, brings his 20 years of culinary experience to the hotel’s esteemed team of food and beverage professionals. As executive chef, Santiago will add an element of creativity to menus to welcome guests, groups and locals at Hilton West Palm Beach.

While focusing on Florida flavors and fresh produce, he also includes techniques from his Latin background, using traditional Spanish herbs and spices. Always working with local farms in South Florida to ensure that all fruits, vegetables and herbs are at the highest possible standard.

Before joining Hilton West Palm Beach, Chef Santiago helmed the kitchen at The Capital Hilton in Washington D.C. and El Conquistador, a Waldorf Astoria hotel, among other esteemed hotels and restaurants. His love for food came at a young age while cooking with his family restaurant in Puerto Rico.
